Directions

  1. Preheat the oven to 400 degrees.
  2. Line a small baking dish with the low-carb tortilla that has been brushed with 1 tsp of oil.
  3. Grate 1 ounce of cheddar cheese – set aside.
  4. Dice onion and bell pepper – set aside.
  5. Place the baking dish with the tortilla in the oven until brown. (5 to 10 minutes)
  6. Brown turkey sausage in a pan, then add onion and bell pepper and saute until sausage is thoroughly cooked through.
  7. While the sausage mixture finishes cooking, crack eggs into a bowl and add to the pan with sausage, onion, and peppers.
  8. Scramble mixture together until cooked through.
  9. Sprinkle half of the cheese mixture onto the browned tortilla, then add the egg and sausage mixture evenly, and top with the remaining cheese.
  10. Place the baking dish back into the oven, uncovered, for 5 minutes.
  11. Remove from the oven and slice into quarters. Serve immediately

Directions

  1. Preheat the oven to 400 degrees.

  • 2 Ounces of Monterey Jack Cheese

Ingredients for 4 Servings of Ranch Dressing

  • ⅓ Cup Mayonnaise
  • ⅛ Cup Greek Yogurt
  • ¼ Teaspoon Dill (Dried)
  • ¼ Teaspoon Parsley (Dried)
  • ¼ Teaspoon Garlic Powder
  • ¼ Teaspoon Onion Powder
  • Dash of Salt and Pepper
  • ⅓ Cup of Whole Milk

Directions: Ranch Dressing

  1. Combine mayonnaise, greek yogurt, dill, parsley, garlic, onion, salt, and pepper into a bowl.
  2. Slowly whisk in milk until the texture is smooth and it is the desired consistency.
  3. Chill in the refrigerator until the taquitos are completed.

Directions: Buffalo Chicken Taquitos

  1. Add water to a large saucepan and bring to a boil.
  2. Add chicken breast, cover, and cook thoroughly. (About 12 to 15 mintues)
  3. Shred Monterey jack cheese and set aside.
  4. Remove chicken from pan and shred and set aside.
  5. Add butter and buffalo sauce into a medium microwave-safe mixing bowl and place in the microwave for 10-second increments to melt the butter.
  6. Mix together butter and buffalo sauce and add in shredded chicken.
  7. Lay out tortillas and evenly fill with chicken mixture and ½ an ounce of shredded cheese.
  8. Roll tortillas and secure with a toothpick, if needed.
  9. Add oil to a saute pan and heat to medium-high.
  10. Place each taquito seam side down to seal the tortilla, then turn to opposite sides to brown.
  11. Remove from heat and serve with ranch dressing.

Ingredients for 4 Servings

  • 1 Carb Balance Soft Taco Tortilla
    1 32 Ounce Carton of Chicken Broth
    3 Large Chicken Breasts (about 12 ounces)
    1 Can of Rotel
    ½ Cup of Corn
    2 Ounces of Cheddar Cheese
    1 Avocado

Directions

  1. Preheat the oven to 400 degrees.
  2. On a baking sheet, slice the tortilla into thin strips.
  3. Coat with a light layer of oil and sprinkle with salt.
  4. Bake in the oven until crispy (between 5 and 10 minutes) and pull out to cool.
  5. While the tortilla is baking, boil chicken breast in water until completely cooked (around 15 minutes)
  6. Once the chicken is fully cooked, remove it from the water and shred it. 
  7. Bring 32 ounces of chicken broth to a boil in a stock pot and add shredded chicken breast, rotel, and corn. 
  8. Let simmer for 10 to 15 minutes
  9. Grate 2 ounces of cheddar cheese and cut the avocado into thin slices.
  10. Serve soup in a bowl topped with ½ ounce of grated cheddar cheese, ¼ of the avocado, and ¼ of the tortilla strips.

Ingredients for 8 Servings

  • 2 Carb Balance Soft Taco Tortilla
    6 Cloves of Garlic
    2 Celery Stalks
    ½ Cup of Onion
    1 Sprig of Parsley
    1 32 Ounce Carton of Chicken Broth
    3 Chicken Leg Quarters (about 12 ounces)
    2 Ounces of Heavy Cream
    2 Tablespoons of Butter
    2 Tablespoons of Vegetable Oil

Directions

  1. Mince 6 cloves of garlic, ½ cup of onion, and 2 celery stalks.
  2. Heat oil in a stock pot and add garlic, onion, and celery.
  3. Cook until translucent, then add chicken legs to brown. 
  4. Once browned on both sides, add 32 ounces of chicken broth. 
  5. Bring to a boil, then reduce heat to low-medium and cover. Cook for 20-25 minutes, or until chicken is falling off of the bone.
  6. Remove from heat and debone and shred chicken. Add back to the pot and bring back to a simmer.
  7. Slice the tortilla in half and then into 1-inch strips. Add to the stock pot with the chicken and broth.
  8. Pour in heavy cream and let cook until the broth begins to thicken.
  9. Add parsley to finish.
