We have a simple and easy recipe to follow, but those wanting to enjoy this pasta for dinner should be sure to make it early in the day because it has a very quick preparation time but takes several hours to set.

With the consistency of regular noodles, just 3 grams of net carbs, and only requiring 2 ingredients, these noodles can easily be made at home and are perfect for keto.

  • 1 cup of mozzarella cheese

  • Step 1: Put the entire cup of mozzarella cheese into a microwave-safe bowl and microwave it for approximately 45 seconds (microwave temperatures vary slightly, so perhaps check at 30 seconds and add a little more time if needed, until cheese is fully melted)
  • Step 2: Crack the egg and separate the yolk from the whites
  • Step 3: Leaving the egg whites out, add just the yolk to the bowl of melted cheese and mix together thoroughly
  • Step 4: Once the cheese and egg yolk are mixed into a thicker dough, it is time to form the noodles. Place the dough onto a piece of parchment paper, flatten it by hand, and place another piece of parchment paper over the dough to make for easy clean up afterward.
  • Step 5: Roll the dough with a rolling pin, flattening it between the two pieces of parchment paper until approximately ⅛ inch thick
  • Step 6: Remove the top sheet of parchment and use a pizza cutter to slice long strips of dough to cut into noodle sized pieces; noodles can be thin or thick according to preference
  • Step 7: Now for the long wait–put the noodles in the refrigerator, where they will take about 5 hours to fully set and moisture will be removed to give the noodles better texture
  • Step 8: After the 5 hour wait, take noodles out of the fridge and place them in a pot of boiling water for a mere 30 seconds
  • Step 9: Run pasta briefly under cold water immediately after taking them off of the stove so they don’t lose their shape or get too melted

For example, someone in powerlifting may wonder is pasta good for bulking, while someone on the keto low carb diet needs to focus more on whether or not pasta is suitable for weight loss and if it fits into keto carb restrictions.

When searching for the optimal keto noodle replacement, it’s essential to prioritize noodles that are not only low in carbs for keto compliance but also promote overall health.

Beyond checking for carbs, one should also watch out for noodles with low or no protein, not only because it is so essential to refueling and reenergizing on the keto diet, but because protein can also help one feel fuller for longer, helps increase muscle mass and strength, and lowers blood glucose levels.

Watch out for noodles low in fats as well as fat should make up a vast majority of one’s daily consumption on keto.
